Blended Bison and Mushroom Burgers

Blending mushrooms with lean meats, such as bison, is the trick to keeping burgers juicy and tender. These burgers are served bun-free for a protein-packed meal. 


  • 8 Ounces
    white button mushrooms, plus 8 medium mushrooms
  • 1 Pound
    ground bison
  • 1 Teaspoon
    fine sea salt
  • 1 Teaspoon
    garlic powder
  • 1 Teaspoon
    onion powder
  • 1/2 Teaspoon
    smoked paprika
  • 1/4 Teaspoon
    ground black pepper
  • 1 Tablespoon
    olive oil
  • Large lettuce leaves
  • Sliced tomato
  • Sliced red onion
  • Ketchup
  • Mayonnaise


  1. Add 8 ounces of mushrooms to bowl of a food processor and pulse until finely chopped. Blend together mushrooms and ground bison in a medium bowl. Add salt, garlic powder, onion powder, smoked paprika and pepper, and mix well. Form into 6 patties.

  2. Slice remaining 8 mushrooms. Heat olive oil in a large skillet over medium-high. Cook mushrooms, stirring often, for 7 to 8 minutes, until browned and tender.

  3. Heat grill to high-heat. Grill burgers about 5 minutes on each side, until they reach desired doneness. Alternatively, burgers can be cooked in a large skillet over medium-high heat.

  4. Top burgers with sliced mushrooms before serving wrapped in a lettuce leaf with your favorite toppings.

    Excellent flavor even with my omitting salt and garlic. You cannot go wrong with bison and mushrooms two winners.
